Our Blue Star Mochiko Sweet Rice Flour is hypoallergenic and often used in specialty food manufacturing. Produced and cold-rolled milled on our farm since the 1940s, Blue Star Brand Mochko Sweet Rice Flour is composed of California farmed, pure, unadulterated short grain sweet rice, no additives of any sort. Mild and neutral in flavor, with superior thickening qualities, our flour is useful for certain applications in gluten-free baking - cooking. In mainstream applications, it was traditionally it was utilized as a sauce thickening alternative to corn starch. Contemporary applications include microwave mochi.Sweet Rice Flour is unique among all varieties of rice flour due to its starch composition of nearly pure amylopectin. This characteristic makes it very viscous and useful as a superior thickening agent by inhibiting liquid separation. Likewise, this stability makes it popular in the manufacturing of frozen foods.Long popular with the Japanese for preparing homemade mochi, manju, chi-chi-dango, arare - senbei and other dishes, Sweet Rice Flour is also used by the Koreans for confections, the Chinese for noodles and certain types of dim sum, the Filipinos for bibingka-type confections and the mainstream segment for gravies, sauces, and batter coatings.Sweet Rice Flour is useful as a gluten-free component in cooking - baking and well established with individuals with celiac disease (gluten intolerance). With the heighten awareness of gluten-free products, it is interesting to note that in Celiac Sprue support circles, the wide-spread usage of the term Mochiko to refer to sweet rice flour can be directly linked to our trademarked Mochiko Blue Star Brand.Our milling facilities are dedicated exclusively to the production of our rice products (no dairy products or by-products are involved). Mochiko Blue Star Sweet Rice Flour contains no additives and has not been treated with sulfating agents. We do not do process or co-pack for other entities (no chance of cross-contamination).
